  • 200 g shrimp Peeled and deveined.

  • 2-3 tablespoons fish sauce Use low-sodium for a healthier version.
  • 1 tablespoon lime juice Always add at the end.
  • 1 teaspoon palm sugar or white sugar Can be omitted.
  • 1 tablespoon nam prik pao Optional.
For Garnish
  • Fresh cilantro leaves Sprinkle generously.
  • Extra chili slices Adjust according to spice preference.
  • Lime wedges For serving.

Step‑by‑Step Instructions
  1. Prepare the aromatics by bruising the lemongrass, slicing the galangal or ginger, and tearing the kaffir lime leaves.
  2. In a medium pot, add 3 cups of chicken or seafood stock and bring to a gentle boil.
  3. Add the prepared aromatics into the boiling stock and let it simmer for 5 to 10 minutes.
  4. Introduce the mushrooms and chopped tomato, continuing to simmer for another 2 to 3 minutes.
  5. Stir in 2 to 3 tablespoons of fish sauce, sugar, and if desired, nam prik pao.
  6. Gently add the shrimp into the pot and cook for 1 to 2 minutes until pink and opaque.
  7. Stir in 1 tablespoon of lime juice and adjust the sourness as needed.
  8. Ladle the soup into bowls and garnish with fresh cilantro leaves and optional chili slices.
