- In a large mixing bowl, combine ground chicken, shredded cabbage, and shredded carrots. Stir in soy sauce, hoisin sauce, garlic paste, ginger paste, sesame oil, salt, and white pepper, mixing until just combined. Pour in hot water to moisten the filling; it should be slightly sticky. Set the mixture aside as you heat the skillet.
- Place a large non-stick skillet over medium heat and add 1 to 2 tablespoons of neutral oil. Allow the oil to heat up, shimmering slightly, which should take about 2 minutes.
- Using a tablespoon or small ice cream scoop, portion the filling into the skillet, spacing them evenly apart. You'll want about 6-8 mounds.
- Carefully take your dumpling wrappers and place one over each mound of filling, gently pressing down to ensure a good seal.
- Once your dumplings are snugly wrapped, pour chicken broth or water around the edges of the skillet to create steam.
