Ingredients
  

For the Noodles
  • 12 oz Udon Noodles Use vacuum-packed for the best texture.
For the Stir-Fry
  • 1 tbsp Neutral Oil Ideal for sautéing.
  • 1 lb Shrimp Peeled and deveined.
  • 3 cloves Garlic Minced.
  • 1 medium Yellow Onion Sliced.
  • 8 oz White Mushrooms Sliced.
  • 1 medium Carrot Cut into matchsticks.
For the Sauce
  • 3 tbsp Regular Soy Sauce Low-sodium works too.
  • 1 tsp Salt
  • 1 tsp Black Pepper Freshly crushed.
  • 2 tbsp Oyster Sauce Optional.
  • 1 tbsp Dark Soy Sauce
  • 1 tbsp Rice Vinegar
  • 1 tbsp Brown Sugar Can substitute honey.
  • 1 tbsp Toasted Sesame Oil Optional.
For Garnish
  • 2 tbsp Spring Onion Chopped.

Method
 

Step-by-Step Instructions
  1. Bring a pot of water to a boil. Add udon noodles and cook for 2-3 minutes. Drain and rinse with cold water, tossing with a bit of oil.
  2. Heat a tablespoon of neutral oil in a skillet over medium heat. Sauté minced garlic for about 1 minute.
  3. Add sliced mushrooms, and stir-fry on high heat for 3-4 minutes until softened.
  4. Add sliced onion and matchstick carrots, seasoning with salt and pepper, sauté for 2-3 minutes.
  5. Add shrimp, cooking for 2-3 minutes until pink and opaque. Drizzle with soy sauce.
  6. Stir in pre-cooked udon noodles and stir-fry for 3-4 minutes until heated through.
  7. Pour sauce over, tossing everything together for 1-2 minutes until coated.
  8. Add sautéed vegetables back, mixing gently for another 1-2 minutes.
  9. Plate the dish while hot and garnish with chopped spring onions. Serve immediately.
