- Begin by boiling a large pot of salted water. Add the lasagna noodles and cook until al dente, about 8-10 minutes. Drain and lay flat on a kitchen towel to prevent sticking.
- In a mixing bowl, combine the cooked shrimp, crab meat, ricotta cheese, half of the Alfredo sauce, and minced garlic. Stir until well mixed and season with salt and pepper.
- Pour a thin layer of the remaining Alfredo sauce in a baking dish. Place a lasagna noodle, add approximately 1/4 cup of seafood mixture on one end, and roll tightly. Place seam side down in the dish.
- Once all roll-ups are assembled, pour the remaining Alfredo sauce evenly over the top. Sprinkle shredded mozzarella and grated Parmesan cheese over the dish.
- Preheat the oven to 375°F (190°C). Cover with aluminum foil, bake for 20 minutes, then remove foil and bake for an additional 10 minutes.
- After baking, let the roll-ups cool for 5-10 minutes before garnishing with parsley and serving.
