Ingredients
  

For the Dough
  • 1.5 cups Warm Water 110°F
  • 1 packet Active Dry Yeast 2 1/4 teaspoons
  • 1 tablespoon Granulated Sugar
  • 4 cups All-Purpose Flour can substitute with bread flour
  • 1 teaspoon Salt
For the Alkaline Bath
  • 2/3 cup Baking Soda
For Assembly
  • 8 slices Cheddar Cheese or mozzarella/pepper jack
  • Coarse Salt for topping
For Serving
  • Mustard or Dipping Sauce optional

Method
 

Preparation Steps
  1. In a medium bowl, combine warm water, active dry yeast, and granulated sugar. Let sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Gradually pour in the yeast mixture and mix until a dough forms.
  3. Transfer dough to a floured surface and knead for 5-7 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let it rise in a warm spot for about 1 hour.
  5. Preheat your oven to 450°F (230°C) and line baking sheets with parchment paper.
  6. In a large pot, bring water to a boil and add baking soda for the alkaline bath.
  7. Punch down the risen dough, divide into 8 pieces, and roll each into a 12-inch rope.
  8. Wrap each hot dog with a slice of cheese, then encase in the dough, pinching ends securely.
  9. Boil the wrapped pretzel dogs in the baking soda water for 30 seconds on each side.
  10. Transfer to prepared baking sheets, brush with beaten egg, and sprinkle with coarse salt.
  11. Bake for 12-15 minutes until golden brown and puffy.
  12. Allow to cool slightly on a wire rack before serving.
