Preparation Steps
- In a medium bowl, combine warm water, active dry yeast, and granulated sugar. Let sit for 5 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour and salt. Gradually pour in the yeast mixture and mix until a dough forms.
- Transfer dough to a floured surface and knead for 5-7 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let it rise in a warm spot for about 1 hour.
- Preheat your oven to 450°F (230°C) and line baking sheets with parchment paper.
- In a large pot, bring water to a boil and add baking soda for the alkaline bath.
- Punch down the risen dough, divide into 8 pieces, and roll each into a 12-inch rope.
- Wrap each hot dog with a slice of cheese, then encase in the dough, pinching ends securely.
- Boil the wrapped pretzel dogs in the baking soda water for 30 seconds on each side.
- Transfer to prepared baking sheets, brush with beaten egg, and sprinkle with coarse salt.
- Bake for 12-15 minutes until golden brown and puffy.
- Allow to cool slightly on a wire rack before serving.
