- In a medium mixing bowl, combine your sourdough discard, flour, baking powder, salt, and olive oil. Stir until clumping forms, then turn out onto a lightly floured surface and knead for 1–2 minutes until smooth.
- Lightly flour your work surface again, then roll the dough into a rectangle about ¼-inch thick (around 10"x12"). Watch for sticking; add flour as needed.
- Transfer the rolled-out dough to a parchment-lined baking sheet. Evenly sprinkle shredded cheese and any optional herbs on top, pressing gently to adhere.
- Preheat your oven to 375°F (190°C). Once heated, bake for 15–18 minutes, rotating halfway for even cooking until golden and bubbly.
- After baking, let the breadsticks cool slightly, then slice while warm and serve with your favorite dips.
