Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5-inch loaf pan by buttering it or lining it with parchment paper.
  2. Mash the overripe bananas in a mixing bowl until smooth, leaving some small lumps for texture.
  3. Whisk in the melted butter, granulated sugar, and brown sugar until combined.
  4. Add eggs one at a time, whisking after each addition, then stir in vanilla extract and sourdough discard.
  5. Fold in the all-purpose flour, baking soda, salt, and cinnamon until just combined.
  6. If desired, fold in chocolate chips or walnuts.
  7. Pour the batter into the prepared loaf pan, smooth the top, and optionally garnish it with banana slices or brown sugar.
  8. Bake for 55 to 65 minutes, checking for doneness with a toothpick.
  9. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
