  • 4 tablespoons olive oil high-quality extra virgin
  • 8-10 cloves garlic very thinly sliced, fresh
  • 4 ounces stale bread torn or thinly sliced
  • 1 tablespoon smoked paprika
  • 6-7 cups chicken stock or vegetable broth

  • 4 large eggs whisked
  • sea salt to taste
  • black pepper to taste

Cooking Instructions
  1. In a large pot, heat olive oil over medium heat. Add sliced garlic and sauté until fragrant and just turning golden, about 2-3 minutes. Stir in smoked paprika.
  2. Add torn stale bread, toasting it for another 3 minutes until golden and slightly crispy.
  3. Gently break up the toasted bread and pour in the broth. Bring to a gentle simmer over medium heat for about 10 minutes, stirring occasionally.
  4. Stir vigorously to create a whirlpool, slowly pour in the whisked eggs while stirring continuously to form delicate ribbons. Cook for another 2-3 minutes.
  5. Taste and season with sea salt and black pepper. Adjust soup consistency with more broth if needed. Serve warm in bowls, garnished with olive oil and parsley.
