Step-by-Step Instructions for Buffalo Chicken Zucchini Boats
  1. Preheat your oven to 400°F (200°C). Slice each zucchini in half lengthwise and scoop out the seeds. Place them cut-side up in a greased baking dish.
  2. Cook ground chicken in a pan over medium heat for 7-10 minutes until fully cooked. Remove from heat and mix in the buffalo wing sauce and ranch seasoning.
  3. Spoon the buffalo chicken mixture into each hollowed-out zucchini half, then sprinkle shredded mozzarella cheese on top.
  4. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 5 minutes until cheese is melted and bubbly.
