For the Mashed Potatoes
  • 2 cups Russet Potatoes Yukon gold or sweet potatoes can be used.
  • 1/2 cup Milk Can substitute with cream or dairy-free alternative.
  • 1 cup Smoked Gouda Cheese Cheddar can be a substitute.
  • 2 tablespoons Unsalted Butter Should be at room temperature.

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C) for crispy skin on the chicken thighs.
  2. In a large mixing bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper to create the marinade.
  3. Add the bone-in chicken thighs to the marinade and coat thoroughly. Marinate for at least 15 minutes.
  4. Peel and chop the russet potatoes; boil in salted water until fork-tender, about 15-20 minutes.
  5. Mash the drained potatoes with milk, unsalted butter, and smoked gouda cheese until creamy.
  6. Transfer marinated chicken thighs to a baking dish, skin-side up, and bake for 25-30 minutes, or until internal temperature reaches 165°F (75°C).
  7. Let the chicken rest briefly before serving on a bed of smoked gouda mashed potatoes and drizzle with pan juices.
