- Preheat the oven to 400°F (200°C) for crispy skin on the chicken thighs.
- In a large mixing bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper to create the marinade.
- Add the bone-in chicken thighs to the marinade and coat thoroughly. Marinate for at least 15 minutes.
- Peel and chop the russet potatoes; boil in salted water until fork-tender, about 15-20 minutes.
- Mash the drained potatoes with milk, unsalted butter, and smoked gouda cheese until creamy.
