For the Dressing
  • 2 tablespoons Fish Sauce Use tamari for a vegetarian option.
  • 1 tablespoon Lime Juice Freshly squeezed.
  • 1 tablespoon Palm Sugar Or brown sugar, to taste.
  • 2 pieces Thai Chilies Adjust based on spice preference.
  • 2 tablespoons Shallots Finely sliced.

Method
 

Step-by-Step Instructions
  1. Soak the dried shrimp in warm water for 2 minutes, then drain.
  2. In a bowl, whisk together fish sauce, lime juice, and palm sugar until dissolved. Stir in chilies and shallots.
  3. Peel and julienne the green mango into strips about 1/4 inch wide.
  4. Combine the mango, cilantro, and half of the peanuts in a large mixing bowl.
  5. Pour the dressing over the salad and toss gently until well coated.
  6. Transfer to a serving dish and garnish with remaining peanuts and soaked shrimp before serving.
