- Preheat the oven to 200°C (400°F).
- Slice the spaghetti squash in half lengthwise, scoop out the seeds, brush inner surfaces with olive oil, sprinkle with salt, and roast cut-side up in a baking dish for about 40 minutes.
- Heat a tablespoon of olive oil in a skillet over medium heat, add minced garlic and sauté for 30 seconds, then stir in fresh spinach and cook for 2-3 minutes until wilted.
- Stir in chopped canned artichokes, softened cream cheese, mayonnaise, grated Parmesan, and mozzarella in the skillet. Heat until melted and combined.
- Scrape the insides of the roasted squash to create strands, fill each half with the creamy filling, and top with extra grated Parmesan cheese.
- Return the stuffed squash to the oven and bake for another 20-25 minutes until the filling is bubbling and cheese is golden.
