Ingredients
  

For the Strawberry Sauce
  • 2 cups Fresh strawberries Can use a mix of frozen and fresh
  • 1/2 cup Sugar Can swap with agave syrup
  • 2 tablespoons Lemon juice Freshly squeezed preferred
  • 2 tablespoons Cornstarch Arrowroot powder is a substitute
For the Cream Layer
  • 8 oz Vegan cream cheese Or mascarpone for a rich texture
  • 1 cup Coconut cream Can use refrigerated coconut milk for lighter
  • 1 cup Sweetened condensed milk Use coconut condensed milk for vegan
  • 1 teaspoon Vanilla extract Vanilla pods can be used
For the Assembly
  • 24 pieces Ladyfingers Store-bought vegan or sponge cake can be substituted

Method
 

Prepare Strawberry Sauce
  1. In a medium saucepan over medium heat, combine fresh strawberries, sugar, and lemon juice. Cook for about 5-7 minutes until the strawberries soften and release their juices. Mix cornstarch with a splash of water until smooth, stir it into the mixture, and simmer for an additional 2-3 minutes until it thickens. Remove from heat and let the sauce cool.
Make Cream Mix
  1. In a large mixing bowl, using an electric mixer, whip together vegan cream cheese or mascarpone with coconut cream, sweetened condensed milk, and vanilla extract. Beat for approximately 3-5 minutes until smooth and fluffy. Cover with plastic wrap and refrigerate for about 30 minutes.
Assemble Tiramisu
  1. Dip ladyfingers quickly into the cooled strawberry sauce. Place a layer in your dish, spread half of the creamy filling over it, followed by a layer of strawberry sauce. Repeat for a second layer.
Chill
  1. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
Serve
  1. Carefully uncover and dust the top with strawberry powder or garnish with fresh strawberry slices. Slice and serve.
