Step-by-Step Instructions

  2. Carefully slice each salmon fillet lengthwise to create a pocket.
  3. Brush the salmon fillets with olive oil and season with salt and pepper.
  4. In a skillet, heat olive oil and sauté the spinach with Italian seasoning, paprika, and cayenne pepper for 2-3 minutes.
  5. Mix in chopped roasted red peppers, crumbled feta, and grated parmesan until combined.
  6. Spoon the spinach-feta mixture into each salmon pocket.
  7. Bake the stuffed salmon for 12-17 minutes until opaque and tender.
