Preparation
- Preheat your oven to 400°F (200°C) and prepare a 12-cup muffin tin with paper liners.
- In a large mixing bowl, whisk together the dry ingredients: all-purpose flour, granulated sugar, baking powder, and salt.
- Rub the zest of 2 large oranges into the sugar mixture to release the oils and create a fragrant base.
- In a separate bowl, whisk together the wet ingredients: egg, milk, vegetable oil, and juice of 1 orange.
- Gently pour the wet mixture into the bowl of dry ingredients and fold until just combined.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 18 to 22 minutes until golden brown and a toothpick comes out clean.
- While baking, mix powdered sugar with orange juice to prepare the glaze.
- Cool muffins in the tin for 5 minutes, then transfer to a wire rack and drizzle the glaze over them.
