- Soak the dried dates in a bowl covered with warm water for about 20 minutes.
- Pulse chopped walnuts in a food processor until coarsely ground for about 10-15 seconds.
- Drain the softened dates and blend them with the ground walnuts until a sticky blend forms, scraping down the sides as needed.
- Add the raw cacao powder, shredded coconut, and maple syrup to the mixture and blend until sticky. Adjust consistency with warm water as needed.
- Line a plate with parchment paper. Set aside remaining shredded coconut in a dish for coating.
- Grease hands with coconut oil, take tablespoon-sized portions of the mixture, and roll into balls about 1 inch in diameter, coating each in reserved shredded coconut.
- Place the rolled energy balls on the parchment-lined plate and freeze for 20-30 minutes to allow them to firm up.
- Store the energy balls in an airtight container in the fridge for up to a week or freeze for longer storage.
