  • 1 cup Raw Cacao Powder Unsweetened cocoa powder can be used instead

  • 1 cup Shredded Coconut (Unsweetened) Can substitute with other unsweetened shredded fruits
For Binding & Moisture
  • 2 tablespoons Coconut Oil Grapeseed oil works as a substitute
For Consistency
  • Warm Water Add as needed for consistency

Method
 

Step-by-Step Instructions
  1. Soak the dried dates in a bowl covered with warm water for about 20 minutes.
  2. Pulse chopped walnuts in a food processor until coarsely ground for about 10-15 seconds.
  3. Drain the softened dates and blend them with the ground walnuts until a sticky blend forms, scraping down the sides as needed.
  4. Add the raw cacao powder, shredded coconut, and maple syrup to the mixture and blend until sticky. Adjust consistency with warm water as needed.
  5. Line a plate with parchment paper. Set aside remaining shredded coconut in a dish for coating.
  6. Grease hands with coconut oil, take tablespoon-sized portions of the mixture, and roll into balls about 1 inch in diameter, coating each in reserved shredded coconut.
  7. Place the rolled energy balls on the parchment-lined plate and freeze for 20-30 minutes to allow them to firm up.
  8. Store the energy balls in an airtight container in the fridge for up to a week or freeze for longer storage.
