- Begin by peeling the carrots and cutting them into even-sized pieces for uniform cooking. Bring a pot of salted water to a boil, then add the carrots and par-boil them for 5–8 minutes until they are tender but still firm. Once done, drain the carrots and set them aside, allowing them to cool slightly while you prepare the glaze.
- In the same pot, over medium heat, melt 2 tablespoons of unsalted butter until bubbling gently. Add in ¾ cup of freshly squeezed orange juice, 2 tablespoons of honey, and the zest of one orange, stirring well to combine all ingredients. Season with a pinch of salt and pepper to taste, allowing the mixture to come together into a harmonious glaze that will coat the carrots beautifully.
- Once the glaze is prepared, return the par-boiled carrots to the pot. Gently toss them in the orange honey glaze, ensuring every piece is well-coated. Continue to cook on medium heat for about 2–3 minutes, allowing the carrots to absorb the flavors of the glaze while becoming heated through.
- Reduce the heat to low and let the carrots simmer uncovered for about 10 minutes, stirring occasionally. This will allow the glaze to thicken slightly and coat the carrots luxuriously.
