Method
 

Preparation Steps
  1. In a mixing bowl, combine the shrimp with adobo sauce, honey, and lime juice and let marinate for about 15 minutes.
  2. Preheat a large skillet over medium-high heat and add olive oil. Cook shrimp for 3-4 minutes per side until bright pink.
  3. In a small bowl, whisk together Greek yogurt, lime juice, and minced garlic until smooth to prepare the dressing.
  4. In a large bowl, add coleslaw mix and pour the lime yogurt dressing over it, tossing gently until evenly coated.
  5. Warm tortillas in the oven wrapped in a damp towel for about 5 minutes.
  6. Assemble tacos by layering cooked shrimp and coleslaw onto tortillas.
  7. Garnish with fresh cilantro and serve immediately.
