- Begin by thinly slicing two medium onions. In a large non-stick skillet, melt 2 tablespoons of unsalted butter over medium heat. Add the sliced onions and a tablespoon of brown sugar, stirring to coat. Cook for about 10-15 minutes, occasionally stirring until the onions become golden brown and caramelized.
- While the onions are caramelizing, crack 4 fresh eggs into a mixing bowl. Add a splash of milk and a pinch of salt to the eggs, then whisk vigorously until the mixture is light and frothy.
- Once the onions are caramelized, reduce the heat to low and push them to one side of the skillet. Pour the whisked egg mixture into the other side and let it sit undisturbed for a moment.
