Step-by-Step Instructions
- Heat 2 tablespoons of olive oil or butter in a non-stick skillet over medium heat until shimmering.
- Add 1 medium onion, thinly sliced, to the skillet and sauté for about 5 minutes until translucent and softened.
- Sprinkle 1 teaspoon of sugar over the onions and stir well to combine for about 1 minute.
- Reduce heat to low and continue cooking the onions for 10-15 minutes, stirring occasionally until deep golden brown.
- In a bowl, crack 4 large eggs and season with salt and black pepper. Whisk gently until combined.
- Push onions to one side of the skillet, pour in the eggs, and cook undisturbed for about 2-3 minutes until edges start to set.
- Once eggs are cooked to your liking, gently fold in the caramelized onions and serve immediately, garnished with fresh herbs if desired.

Notes
Store leftovers in an airtight container for up to 2 days. Freezing is not ideal due to the egg texture, but caramelized onions can be frozen separately for up to 3 months.
