Preparation
- Preheat your oven to 350°F (175°C) and prepare the brownie mix according to the package instructions. Pour the batter into a greased baking dish and bake for 20-25 minutes until a toothpick inserted into the center comes out clean. Let brownies cool completely on a wire rack before cutting into 1-inch squares.
- While the brownies cool, rinse and hull fresh strawberries under cold water. Pat dry with a paper towel. Choose vibrant strawberries for an inviting color contrast.
- Grab your wooden skewers and thread the ingredients. Start with a brownie square, followed by a fresh strawberry and a marshmallow. Repeat this pattern, leaving space at the base of the skewer for easy handling.
- In a microwave-safe bowl, add semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until melted and smooth.
- Once assembled, drizzle or dip the kabobs in the melted chocolate. Place on a parchment-lined tray to chill.
- Transfer the tray of kabobs to the refrigerator and chill for 10-15 minutes until the chocolate is set firm. Arrange on a platter for serving.

Notes
For best results, chill the brownies before assembly and choose ripe strawberries. Engage kids in the assembly process for added fun.
