  • 1 Large Egg Yolk Room temperature
  • 2 tsp Vanilla Extract For cream cheese filling

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare your muffin pan with liners.
  2. In a bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In another bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  4. Gradually add dry ingredients to wet, mixing gently until just combined.
  5. In another bowl, beat cream cheese, granulated sugar for filling, egg yolk, and vanilla extract until creamy.
  6. Fill muffin cups with pumpkin batter, dollop cream cheese mixture on top, and swirl gently with a toothpick.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let muffins cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
