- Begin by setting a box grater inside a large bowl, ensuring it’s stable. This will catch the juices and pulp from your fresh summer tomatoes as you grate.
- Using the small side of the box grater, carefully grate the shallot into the bowl.
- Now switch to the larger side of the grater and grate the large ripe tomato directly into the bowl with the shallot.
- With the grated shallot and tomato combined, it's time to add the chopped Italian parsley, red wine vinegar, extra virgin olive oil, and all the seasonings.
- Using a whisk, mix the dressing vigorously for about 30 seconds.
