  1. Begin by setting a box grater inside a large bowl, ensuring it’s stable. This will catch the juices and pulp from your fresh summer tomatoes as you grate.
  2. Using the small side of the box grater, carefully grate the shallot into the bowl.
  3. Now switch to the larger side of the grater and grate the large ripe tomato directly into the bowl with the shallot.
  4. With the grated shallot and tomato combined, it's time to add the chopped Italian parsley, red wine vinegar, extra virgin olive oil, and all the seasonings.
