- Preheat the oven to 350ºF (175ºC). Lightly spray a 9x13-inch baking pan with cooking spray.
- Heat a skillet over medium heat, add the breakfast sausage and cook until browned, about 5–7 minutes. Drain excess fat.
- In a large bowl, combine cooked sausage, frozen tater tots, cheddar cheese, and mozzarella cheese. Mix until evenly distributed.
- In another bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder until well blended.
- Pour the egg mixture over the sausage and tater tot mixture in the baking pan. Spread evenly with a spatula.
- If preparing ahead, cover tightly with plastic wrap and refrigerate until ready to bake.
- Bake for 60–70 minutes until eggs are set and top is golden brown.
- Let cool for about 10 minutes before slicing and serving.
