Step-by-Step Instructions
  1. Preheat the oven to 350ºF (175ºC). Lightly spray a 9x13-inch baking pan with cooking spray.
  2. Heat a skillet over medium heat, add the breakfast sausage and cook until browned, about 5–7 minutes. Drain excess fat.
  3. In a large bowl, combine cooked sausage, frozen tater tots, cheddar cheese, and mozzarella cheese. Mix until evenly distributed.
  4. In another bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder until well blended.
  5. Pour the egg mixture over the sausage and tater tot mixture in the baking pan. Spread evenly with a spatula.
  6. If preparing ahead, cover tightly with plastic wrap and refrigerate until ready to bake.
  7. Bake for 60–70 minutes until eggs are set and top is golden brown.
