For the Vanilla Buttercream

Method
 

Prepare the Cake
  1. Preheat your oven to 350°F (175°C). In separate bowls, sift the dry ingredients for the Double Chocolate and Classic Chocolate Chip layers including flour, cocoa powder, baking soda, and salt. Set bowls aside while preparing wet ingredients.
  2. In two mixing bowls, cream together the unsalted butter and sugars for the Double Chocolate and Classic layers until light and fluffy, about 3-5 minutes. Add in eggs and vanilla extract, blending until fully incorporated.
  3. Gradually incorporate sifted dry mixtures into wet ingredients for both layers, mixing gently until just combined. Fold in chocolate chips into the Double Chocolate layer.
  4. For Funfetti layer, cream softened unsalted butter and sugars together until smooth. Beat in egg and vanilla extract, followed by Funfetti cake mix and all-purpose flour. Fold in sprinkles and white chocolate chips.
  5. In a greased 9x13-inch baking dish, pour the Double Chocolate batter evenly across the bottom. Add the Classic Chocolate Chip layer, spreading it uniformly. Dollop Funfetti mix on top and gently spread out. Bake for 25-30 minutes.
  6. Once baked, allow cake to cool in the pan for at least 15 minutes before transferring to a wire rack. Prepare Vanilla Buttercream by beating softened butter with powdered sugar and vanilla until fluffy, adding a splash of cream for perfect consistency.
  7. Once cooled, generously frost the top of the cake with Vanilla Buttercream, creating an even layer over each visible layer. Add sprinkles on top for a playful touch.
