Ingredients
  

For the Pasta
  • 12 oz Pasta of your favorite pasta (penne, fusilli, or spaghetti)
For the Sauce
  • 1 tablespoon Olive Oil for sautéing
  • 1 small Onion finely chopped
  • 2 cloves Garlic minced
  • 1 can (15 oz) Pumpkin Puree the heart of the dish
  • 1 cup Coconut Milk full-fat for creaminess
  • 1 tablespoon Nutritional Yeast adds cheesy flavor
  • 1 teaspoon Dried Sage for an earthy flavor
  • 1/2 teaspoon Ground Nutmeg for warmth
  • Salt and Pepper to taste
  • 1 cup Spinach Leaves roughly chopped
For the Garnish
  • Fresh Parsley for garnish
  • Vegan Parmesan Cheese optional

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil and add the pasta. Cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Once shimmering, add chopped onion and sauté for 5 minutes until translucent.
  3. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  4. Incorporate pumpkin puree and coconut milk into the skillet, blending everything well. Add nutritional yeast, dried sage, ground nutmeg, salt, and pepper. Simmer over medium heat.
  5. Cook the sauce for 5 minutes, stirring occasionally until it thickens.
  6. Fold in chopped spinach leaves and cook for an additional 2-3 minutes until wilted.
  7. Taste and adjust seasoning as needed.
  8. Add the drained pasta to the sauce, tossing gently to coat evenly.
  9. Serve warm, garnished with parsley and optional vegan parmesan.
