- Wash your fresh vegetables under cold running water. Slice the cucumbers and tomatoes into thin rounds, and shred or chop the lettuce.
- Slice the ciabatta or sourdough bread in half horizontally. Spread a layer of Boursin garlic and herb cheese on one side of each bread piece.
- Layer the lettuce, cucumbers, tomatoes, and bell peppers on one slice of bread.
- If using, add provolone cheese on top of the layered vegetables.
- Place the second slice of bread on top, cheese side down, and gently press down to merge the ingredients.
- Cut the assembled sandwich in half diagonally and serve immediately.
