  • 1 cup Cucumbers sliced, preferably English
  • 1 cup Tomatoes sliced, heirloom varieties recommended
  • 1 cup Bell Peppers sliced, mixed colors
For the Bread
  • 2 slices Ciabatta or Sourdough Bread whole grain for added health benefits
Optional Extras
  • 2 slices Provolone Cheese or vegan cheese
  • 1 medium Avocado sliced
  • 1 tablespoon Fresh Herbs such as basil or cilantro

Method
 

Step-by-Step Instructions
  1. Wash your fresh vegetables under cold running water. Slice the cucumbers and tomatoes into thin rounds, and shred or chop the lettuce.
  2. Slice the ciabatta or sourdough bread in half horizontally. Spread a layer of Boursin garlic and herb cheese on one side of each bread piece.
  3. Layer the lettuce, cucumbers, tomatoes, and bell peppers on one slice of bread.
  4. If using, add provolone cheese on top of the layered vegetables.
  5. Place the second slice of bread on top, cheese side down, and gently press down to merge the ingredients.
  6. Cut the assembled sandwich in half diagonally and serve immediately.
