Ingredients
  

For the Dressing
  • 1/4 cup extra-virgin olive oil or avocado oil for a milder taste
  • 3 tablespoons fresh lemon juice or lime juice as an alternative
  • 2 tablespoons honey or maple syrup for a vegan option
  • 1 tablespoon Dijon mustard or yellow mustard in a pinch
  • 1 tablespoon chopped fresh parsley or any fresh green herb you prefer
  • 1 pinch crushed red pepper flakes adjust to your preference
  • to taste kosher salt or sea salt
  • to taste black pepper freshly ground is preferred
For the Couscous Salad
  • 1 cup water boiling
  • 1 cup couscous try whole wheat for extra nutrition
  • 2 cups arugula or spinach/mixed greens
  • 1 cup Parisian cucumbers or regular cucumbers, seeds removed
  • 1 cup avocado add just before serving to prevent browning
  • 1 cup cherry tomatoes or grape tomatoes
  • 1 cup corn kernels frozen can be used if fresh isn't available
  • 1/2 cup feta cheese omit for vegan or try plant-based feta

Method
 

Prepare the Dressing
  1. In a medium bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, parsley, crushed red pepper flakes, salt, and pepper. Set aside.
Cook the Couscous
  1. In a medium saucepan, bring water to a rolling boil. Stir in couscous and a pinch of salt. Cover the pan and remove from heat. Let stand for 5 minutes, then fluff with a fork.
Combine the Ingredients
  1. In a large mixing bowl, combine the fluffed couscous, arugula, cucumbers, cherry tomatoes, corn, and feta. Drizzle the dressing over and gently toss.
Add the Avocado and Serve
  1. Before serving, fold in diced avocado. Serve warm or at room temperature.
