- Cook the vermicelli rice noodles according to the package instructions, about 3-5 minutes until al dente. Drain and rinse under cold water.
- Soak one rice paper wrapper in warm water for 15-20 seconds until soft. Lay it on a clean, damp surface to prevent sticking.
- On the damp rice paper, layer chopped lettuce, cooled vermicelli noodles, shredded chicken, julienned carrots, cucumber, and herbs. Leave space at the edges for rolling and roll tightly.
- Carefully place finished rolls on a platter, seam side down. Serve fresh with your favorite dipping sauces.
