  • 1 cup Vermicelli Rice Noodles Cook according to package instructions.
  • 2 leaves Lettuce Leaves (chopped) Romaine or butter lettuce can also be used.
  • 1 cup Carrots (julienned) Zucchini can be a substitute if preferred.
  • 1 cup Cucumber (julienned) Consider bell peppers for a new flavor twist.
  • 1 cup Fresh Mint Leaves
  • 1 cup Fresh Basil Leaves Cilantro can substitute if preferred.
  • 1 cup Cilantro Leaves
For the Dipping Sauces
  • 1 cup Peanut Sauce Alternatives include hoisin or sweet chili sauce.
  • 1 cup Hoisin Sauce

Step-by-Step Instructions
  1. Cook the vermicelli rice noodles according to the package instructions, about 3-5 minutes until al dente. Drain and rinse under cold water.
  2. Soak one rice paper wrapper in warm water for 15-20 seconds until soft. Lay it on a clean, damp surface to prevent sticking.
  3. On the damp rice paper, layer chopped lettuce, cooled vermicelli noodles, shredded chicken, julienned carrots, cucumber, and herbs. Leave space at the edges for rolling and roll tightly.
  4. Carefully place finished rolls on a platter, seam side down. Serve fresh with your favorite dipping sauces.
