  • 1 teaspoon Dijon mustard optional
  • 1 tablespoon dried oregano or use fresh for more flavor
  • 2 cloves garlic minced
  • 1/4 cup crumbled feta optional
  • salt to taste
  • black pepper to taste

Step-by-Step Instructions
  1. In a clean pint jar, pour in ¾ cup of extra-virgin olive oil, followed by ¼ cup of freshly squeezed lemon juice and the zest of one lemon. Next, add 2 tablespoons of red wine vinegar, 1 teaspoon of Dijon mustard, 1 tablespoon of dried oregano, and 2 cloves of minced garlic.
  2. Secure the lid tightly on the jar and give it a vigorous shake for about 30 seconds.
  3. If including feta, add ¼ cup of crumbled feta cheese into the jar now and gently shake the jar again for about 10 seconds.
  4. Remove the lid and taste the dressing, adjusting the seasoning with salt and pepper as needed.
  5. Your Greek Salad Dressing is now ready to be used immediately or stored for later.
