  • 1 cup Diced Bell Pepper Use red, orange, or yellow varieties.
  • 1/2 cup Finely Diced Red Onion Shallots can be a milder alternative.
  • 1 cup Shredded Sharp Cheddar Cheese Feel free to omit for a dairy-free version.
  • 1/4 cup Chopped Cilantro Substitute parsley if cilantro isn't preferred.
  • 1 medium Avocado Optional; add just before serving.
  • 1 cup Tortilla Chips For serving, optional.
For the Dressing
  • 1/2 cup Plain Greek Yogurt Substitute with mayonnaise for dairy-free.
  • 2 tablespoons Fresh Lime Juice
  • 1 tablespoon Taco Seasoning Feel free to use homemade blend.
  • 1 clove Minced Garlic Garlic powder can be substituted.
  • 1 teaspoon Honey

Method
 

Combine Salad Ingredients
  1. In a large mixing bowl, add the cooked, shredded chicken, drained and rinsed black beans, corn, diced tomatoes, diced bell pepper, finely diced red onion, chopped cilantro, and optional diced avocado. Use a spatula to gently fold the ingredients together until well combined.
Make the Dressing
  1. In a separate small bowl, whisk together the plain Greek yogurt, fresh lime juice, taco seasoning, minced garlic, and honey. Adjust the seasoning to your taste.
Toss the Salad
  1. Drizzle the dressing over the combined salad ingredients and toss gently until everything is evenly coated.
Serve or Store
  1. Serve immediately topped with tortilla chips or store in an airtight container for up to 3-4 days.
