  1. Begin by heating a large skillet over medium heat. Add 2 tablespoons of butter, ghee, or olive oil, letting it melt completely—this should take about 1–2 minutes.
  2. Once the fat is melted, add 2 minced garlic cloves to the skillet. Sauté for about 30 seconds until fragrant and slightly golden.
  3. Stir in 1½ cups of shredded carrots into the skillet, mixing well to coat them in the garlic-infused fat. Sauté for 2 minutes until they begin to soften.
  4. Next, add 2 cups of shredded zucchini to the skillet with the softened carrots. Sauté for an additional 2–3 minutes until the zucchini is tender.
  5. Finally, season your Zucchini and Carrot Hash with salt and pepper to taste and serve warm.
