Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease an 8x8 inch baking dish with ½ tablespoon of oil.
  2. In a medium bowl, combine rolled oats, ground cinnamon, ground nutmeg, baking powder, and salt. Stir well.
  3. Add eggs, milk, vanilla extract, and remaining oil to the dry ingredients. Mix and drizzle in maple syrup or honey.
  4. Fold in blueberries and grated zucchini carefully to avoid squishing the blueberries.
  5. Pour the mixture into the greased baking dish and top with remaining ½ cup of blueberries.
  6. Bake for 40-45 minutes until golden brown and the center is set.
  7. Let it cool for 10-15 minutes before cutting into squares and store in an airtight container.
