Ingredients
  

Main Ingredients
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes 28 oz
  • 4 cups chicken broth
  • 8 oz lasagna noodles broken into pieces
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 tbsp Italian seasoning
  • salt to taste
  • pepper to taste

Method
 

Cooking Steps
  1. In a large pot, brown the ground beef over medium heat.
  2. Add the chopped onion and minced garlic; cook until softened.
  3. Stir in the diced tomatoes and chicken broth.
  4. Bring to a boil, then add the broken lasagna noodles.
  5. Reduce heat and simmer until noodles are tender.
  6. Stir in the ricotta and mozzarella cheese until melted.
  7. Season with Italian seasoning, salt, and pepper to taste.
  8. Serve hot and enjoy your one pot lasagna soup!
