Step‑by‑Step Instructions for Classic Homemade Apple Pie
  1. Preheat your oven to 425°F and fit a rimmed baking sheet on the middle rack.
  2. Roll out your chilled pie dough into a 12-inch circle and fit it into your pie dish.
  3. Combine sliced assorted apples with granulated sugar, flour, lemon juice, cinnamon, vanilla, and salt. Toss until well-coated.
  4. Pour the apple mixture into the pie crust and dot with unsalted butter pieces.
  5. Roll out the second batch of pie dough into a 12-inch circle, place it over the filling, and crimp the edges.
  6. Whisk together the egg and water for egg wash, brush over the crust, and sprinkle with coarse sugar. Make slits for venting.
