- Place about 2 pounds of boneless, skinless chicken breasts evenly in your crockpot.
- In a mixing bowl, combine 10.5 oz cream of chicken soup, 8 oz cream cheese, 1 oz ranch dressing mix, and 1 cup chicken broth. Stir until smooth, then pour over the chicken in the crockpot.
- Season with salt and pepper to taste. Cover and cook on low heat for 6 hours.
- About 15 minutes before the chicken is done, boil salted water and cook 16 oz pasta until al dente. Drain and set aside.
- Remove chicken from the crockpot and shred with two forks. Return to the crockpot.
- Add drained pasta to the crockpot and stir gently to combine.
- Sprinkle 1 cup shredded cheddar cheese over the top. Cover and let sit for 5-10 minutes to melt the cheese.
- Garnish with fresh parsley and serve hot.
