  • 12 oz Italian Meatballs Replace with turkey meatballs for a leaner option or omit for vegetarian.
  • 6 oz Frozen Chopped Spinach Fresh spinach works too, adjust for volume.
  • 9 oz Cheese Tortellini Any pasta can be substituted, adjust cooking times.

Method
 

Cooking Instructions
  1. Heat the Dutch oven over medium heat, adding beef broth and marinara sauce. Stir and bring to a gentle boil.
  2. Add thawed mixed vegetables, navy beans, meatballs, and chopped spinach. Stir and simmer uncovered for 5 minutes.
  3. Stir in cheese tortellini and let simmer for an additional 7 minutes until tender.
  4. Ladle soup into bowls and sprinkle shredded Parmesan cheese on top before serving.
