  • 1/2 cup Butter Vegetable oil offers a lighter texture if desired.

  • 8 oz Cream Cheese Mascarpone can be swapped for a unique twist.
  • 2 cups Confectioners' Sugar Consider powdered erythritol for a low-sugar alternative.

Equipment

  • Oven
  • mixing bowl
  • electric mixer
  • Loaf pan
  • Wire rack

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare your baking pan by greasing a standard loaf pan.
  2. In a mixing bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder, and a pinch of salt until well combined.
  3. In a separate large bowl, beat the softened butter and granulated sugar using an electric mixer until light and fluffy, about 3-4 minutes.
  4. Add the eggs to the butter and sugar mixture, one at a time, mixing fully before adding the next.
  5. Slowly add the dry ingredients to the wet mixture, alternating with the milk, mixing lightly until just combined.
  6. Pour the batter into the prepared loaf pan and bake for 50–60 minutes until a toothpick comes out clean.
  7. Once baked, cool the loaf in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  8. While cooling, beat the softened cream cheese and butter together until smooth, then gradually add confectioners' sugar.
  9. Spread the cream cheese frosting generously on top of the cooled loaf cake.
  10. Slice and serve the cake, sharing it with family and friends.
