- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, and baking soda until thoroughly combined.
- In a large mixing bowl, cream together butter and sugar until light and fluffy, about 2-3 minutes.
- Add egg, vanilla extract, and red food coloring to the butter mixture and mix until fully blended.
- Gradually incorporate the dry mixture into the wet ingredients and mix on low speed until just combined.
- Using a cookie scoop, portion out the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until the edges are set but the centers are slightly soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
